【$20 Lobster • Lobster Stir Fry by Chef Bao】

# Ingredients

Lobster
½ cup Scallion
1/3 cup Ginger
Cooking Oil
Cooking Wine
2 tbsp Soy sauce
Flour
1 tbsp Sugar
1/3 cup Water
Cornstarch + Water
Salt and pepper to taste

# Directions

1. Clean the lobster (Use brush if possible). Cut it into pieces.
2. Coat all the pieces with flour. Set aside.
3. Heat up a small pan with medium-high heat, add cooking oil, place on the frosted pieces. Cook until turn red. Transfer to a bowl.
4. In another large pan, turn up to high heat, add cooking oil, shred ginger and chopped scallion. Pan-fry until sauté. Put the cooked lobster into the pan, stir-fry for a while. Whisk in cooking wine and soy sauce. Season with sugar, salt and pepper. Add some water, and thicken the lobster with cornstarch. Transfer to the plate and serve immediately.

【$200 Lobster • Lobster in steamed egg tofu by Master Chef Luo】

# Ingredients

Lobster
Egg white(10 Eggs)
200ml Milk
250ml Chicken broth
150g Broccoli
1 tsp Cornstarch
¼ cup Ginger
1/3 cup Scallion
Cooking oil
Salt
Crab butter (For Garnish)

# Directions

1. Clean the lobster (Use brush if possible). Cut it into pieces. Peel it.
2. Coat all the pieces with cornstarch and salt. Set aside.
3. In a large bowl, whisk in egg white, milk and chicken broth. Steam as White steamed water egg. Set aside.
4. Stir-fry the lobster well, place on the steamed egg. Garnishing with Broccoli.
5. Thicken the chicken broth with cornstarch, and baste the lobster dish.
6. Sprinkle the crab butter on the top as the final step.
